Tilapia with Chimichurri sauce

Sauce serves 6
1/4 cup olive oil
2/3 cup sherry vinegar
3/4 cup fresh parsley, chopped
3 tablespoons fresh oregano, chopped
3 tablespoon fresh lemon juice
6 large cloves garlic, chopped

Combine all ingredients. Season with salt and pepper. Set aside.
Bake Tilapia in oven at 375F for 10 minutes, on a baking sheet lined with parchment paper.
When serving the Tilapia, spoon Chimichurri sauce onto cooked fillets. Serve with salad, rice or roasted root vegetables.
