Serves 2.

Ingredients
2 Fresh Regal Springs Tilapia fillets, cut into small chunks
2 tablespoons canola oil
1 red bell pepper, sliced thinly
1 green bell pepper, sliced thinly
1 cup broccoli florets
8 ounces brown mushrooms, sliced
1 cup snap peas
2 tablespoons rice wine
½ cup black bean paste
1 small red chili pepper, finely diced
¼ cup green onion, sliced

Directions
In a wok, heat canola oil until very hot.
Add bell peppers, broccoli and mushrooms, and stir.
Add snap peas and Regal Springs Tilapia chunks, stirring well for 2–3 minutes.
Add rice wine and black bean paste.
Finally, add the diced chili pepper and green onion.
Toss and serve at once, with rice if desired.
