Tilapia Burrito Bowl

Don’t be surprised if this Tilapia Burrito Bowl recipe joins your regular weeknight rotation! Quick to prepare and bursting with fresh flavor, it’s makes a satisfying Mexican-inspired meal.

Serves 4.


4 fresh Regal Springs Tilapia Fillets
1-1/2 cups water
1 (6-oz) box instant
yellow rice mix
2 tablespoons vegetable oil
1/4 cup red onion, diced
1/4 cup canned refried beans
4 each flour tortilla bowls
1/4 cup cheddar cheese,
2 tablespoons sour cream
black pepper


In a microwave-safe container, combine water, rice mix and 1 tablespoon oil. Microwave on high for 2-1/2 minutes. Stir and cook for an additional 2-1/2 minutes. Set aside.

In a sauté pan, sauté onion in remaining oil and set aside.

In another microwave-safe container, warm refried beans and set aside.

Add Regal Springs Tilapia loins to the hot sauté pan. Cook approximately 4 minutes per side, to an internal temperature of 165ºF. Remove from pan and season to taste with paprika, salt and pepper.

Portion rice into tortilla bowls. Top with refried beans, onion, cheese, tilapia fillets and sour cream, and serve.
