Tilapia and Herbs
Delicate and Delicious Soup
This fantastic soup is the ideal lunch meal… delicate, full of taste, and extremely light. Regal Tilapia® is the perfect fish for such a flavorful soup, since the Regal Tilapia has such a clean-tasting, white flesh. (Takes you 20 minutes max!)
2 – 3 Fresh or frozen tilapia fillets, cut into bite sized nuggets. If the frozen fish is cut, it will quickly thaw.
8 oz. of pineapple, chopped into small cubes. (Canned is fine)
4 cups of good fish stock (or ordinary vegetable bouillon stock)
1/4 cup lime juice
1/4 cup fish sauce
large chunk of fresh ginger (the more the better!)
1 tablespoon of sugar (optional)
1-2 sliced Serrano peppers (optional)
1 cup roughly chopped fresh cilantro
1 cup roughly chopped fresh mint
sliced spring onions for garnish
COOK Bring stock to boil with ginger, after 5 minutes reduce to simmer, add pineapple, fish, peppers. Simmer for 5-7 minutes.
Add lime juice, fish sauce, and herbs. Immediately take off heat. Taste, and add sugar if you wish. Serve over rice.
