Tilapia Al Ajillo
Serves 4, Preparation time: 20- 25 min per piece
4 Regal Springs Whole Fish
1 cup olive oil
10 garlic cloves finely chopped
1 guajillo chili chopped in strips
2 liters of corn oil for frying
6 whole and clean garlic cloves
salt and pepper to taste
1. Heat the olive oil on medium heat, add the garlic and cook until the garlic cloves look golden, add the guajillo chili. Reserve.
2. Heat the corn oil in a large deep fry pan. Add the whole garlic cloves.
3. Fry the whole fish individually immersed in the oil for about 20 minutes per piece, spinning continuously and bathing with the oil to be perfectly cooked and golden skin.
4. Remove from the oil, drain and boil bathed with a little garlic oil with chilli and the salad of your choice. Accompany with lemon, green sauce and tortillas.
Using an absorbent towel dry the fish perfectly so that when frying it does not abruptly sprinkle the oil to avoid burning.
