Rustic Lake-Grown Tilapia Tacos
When Mexican food comes to mind, the first thing you probably think of are tacos, delicious tacos. This tasty Tilapia recipe will introduce your palate to the complex and vibrant flavors of Mexico, all from the comfort of your own kitchen. For the best flavor, we prefer Fresh Tilapia from Mexico or Honduras and Frozen Tilapia from Indonesia and Mexico.
4 Regal Springs Lake-Grown Tilapia fillets
1 Bunch fresh cilantro
2 Jalapeno peppers
1 Habanero pepper (Optional-Spicy)
8 Fresh corn tortillas
1 Head red cabbage
1 Head butter lettuce or other fresh green
1 Yellow Onion
2 Fresh limes
For the Salsa:
Cut tomatoes into small cubes
Cut onion into thin slices (not small dice)
Slice 2 radishes very thin
Chop a handful of fresh cilantro leaves
Dice 1 jalapeno
Dice 1 habanero
Mix in a bowl and add the juice and zest of 1 lime season with salt and pepper
For the fish:
Season the fillets with salt, pepper, cumin, and chili powder
grill the fillets over high heat turning only once during cooking.
Set the fish a side and grill each tortilla long enough to warm and give good grill marks.
Cut the fish fillets in strips
To the plate:
On a grilled tortilla place a bed of chopped cabbage, cilantro, sliced avocado, torn lettuce and salsa.
Place strips of fish on top and garnish with sliced jalapeño and cilantro.
Squeeze a lime segment over fish and serve. Enjoy!
