Pibil Tilapia Loins

Serves 4, Preparation time: 30 min


4 Regal Springs Tilapia Loins
2 roasted tomatoes
2 whole garlic clove
¼ piece achiote stick
Ground oregano to taste
½ cup of orange juice
4 lemons (juice)
1 chopped red onion
½ cup apple cider vinegar
1 chile habanero chopped
4 teaspoons of olive oil
salt and pepper to taste


1. Grind the tomatoes, garlic, achiote, oregano, orange juice, lemon juice, salt and pepper to taste. Place Mojarra loins in a refractory with lid. Marinate in the refrigerator for 30 min.
2. In the meantime, mix the red onion with vinegar, ground oregano to taste and habanero chile in a bowl. Reserve.
3. Remove the fillets from the marinade and drain.
4. Heat the olive oil in a frying pan, add the Tilapia loins and cook covered over medium heat for 8 – 10 minutes or until the loins are perfectly cooked. Remove the loins and add the marinade, wait for it to boil, rectify the seasoning.
5. Serve the loins accompanied with red onion, diced mango, fresh lettuce and the pibil sauce.
