Panko-Dijon Crusted Tilapia with Asparagus and Roasted Potatoes

Regal Springs Lake-Grown Tilapia is one of the best proteins because it’s versatile,  healthy, tasty and easy to cook. This crisp Panko-Dijon Crusted Tilapia with asparagus and roasted potatoes is great because it can be cooked in one pan which makes cleanup a breeze.

Ingredients:

4 Lake Raised tilapia fillets seasoned with fresh cracked pepper and sea salt

8 TBL spoons panko bread crumbs

6 TBL spoons whole grain mustard

2 TBL spoons fresh dill picked from stems

3 TBL spoons olive oil

1 Bunch asparagus

1-pound baby red potatoes

 

Preparation:

Coat potatoes in oil salt and pepper then place on a baking sheet in a 325-degree oven.  Allow potatoes to cook for 6 minutes. While potatoes are cooking season asparagus with oil and salt and pepper. Also mix Dijon, panko dill together and top each loin with mixture. Remove potatoes from oven and add the asparagus and fish to the pan and return to oven allowing all to cook for another 12 minutes.  Remove pan from oven and plate.
