Green Goddess Tilapia Lettuce Wraps

2 fresh Regal Springs Tilapia fillets
1 tablespoon olive oil
½ lime, juiced
¼ teaspoon salt
⅛ teaspoon pepper
1 tablespoon fresh mint, chopped
1 tablespoon fresh cilantro, chopped
2 collard green leaves, stems removed
½ cucumber, diced
½ avocado, sliced thinly
¼ cup feta cheese
2–3 tablespoons tzatziki


Preheat oven to 375ºF.

Place Regal Springs Tilapia fillets on a baking sheet and drizzle with olive oil and lime juice. Sprinkle with salt, pepper, mint and cilantro.

Bake for 15 minutes.

When tilapia is finished baking, place it onto a collard green leaf and top with cucumber, avocado, feta, and tzatziki.
Roll into a wrap or eat like a taco.
