Fiesta Tilapia Taco

Serves 3.

Ingredients

1 Regal Springs Lake-Raised Tilapia Fillets
1 Lime, cut into segments
3 Small flour tortillas
3 oz. Lettuce mix or shredded cabbage
3 oz. Shredded Mexican cheese blend
3 oz. Salsa or pico de gallo

Directions

Grill, bake or sauté tilapia until internal temperature of 145°F.

Squeeze on fresh lime juice, then season to taste. Cut into 3 pieces.

Warm tortillas the same way you cook the fish.

Place tortillas on a plate, then add to each: 1 oz. lettuce, 1 oz. cheese, 1 oz. salsa or pico de gallo.

Place cooked fish on top and serve. Makes 3 tacos.
