Chili-Lime Tilapia Tostadas

Serves 4.


4 Regal Springs Tilapia fillets
3 garlic cloves, chopped
1/4 cup fresh lime juice
1 tablespoon honey
1/2 teaspoon cumin
1/2 teaspoon chili powder
1/2 teaspoon coriander
Salt and black pepper to taste
6 corn tortillas
1/2 cup olive oil
1 green bell pepper, chopped
1 avocado, chopped
1 bunch fresh cilantro, stemmed and chopped
1/3 cup queso blanco
fresh salsa of choice


In a bowl, mix garlic, lime juice, honey, cumin, chili powder, coriander, salt and pepper. Mix thoroughly, then coat tilapia fillets with this marinade. Allow to sit for 10 minutes.

Grill fish over medium-high heat 3–4 minutes per side or until done, taking care not to burn. Remove from heat and chop.

In a large pan, sauté each tortilla in olive oil, cooking on each side until golden.

Top tortillas with green pepper, avocado, cilantro and queso blanco. Finish with equal amounts of fish and serve with salsa.
