Barbecued Tilapia Flatbread

Serves 4.


4 Regal Springs Tilapia fillets
4 pieces flatbread/pizza dough
1 cup bacon jam
4 plum tomatoes, sliced
Olive oil
1 cup sweet and spicy barbecue sauce
4 cups baby spinach


Preheat a grill or grill pan to medium-high heat. Preheat an oven to 350ºF.

Lay out flatbreads on an oven-safe tray; layer each with bacon jam and sliced tomatoes. Place in heated oven for 6–8 minutes.

While flatbreads are cooking, brush each side of tilapia fillets with olive oil. Place tilapia on the grill or in the grill pan; cook 3–4 minutes on each side, continually basting with barbecue sauce.

Remove flatbreads from oven and lightly cover each with equal amounts of baby spinach. Place 1 cooked tilapia fillet atop each flatbread.
