Baked Fish and Chips

Serves 4.


4 Regal Springs Tilapia fillets
1 potato, peeled and thinly sliced
1 sweet potato, peeled and thinly sliced
Drizzle of olive oil
Salt and black pepper to taste
Seasoned panko breadcrumbs
3–4 eggs, beaten for an egg wash
1 tablespoon butter


Preheat an oven to 425ºF.

Drizzle sliced potato and sweet potato with olive oil; season with salt and pepper. Place on a sheet pan in one layer.

Bake in preheated oven until crispy, about 20 minutes.

While fries are crisping, in a sauté pan over medium heat, melt butter. Add panko breadcrumbs to lightly brown them; set aside.

Dredge each tilapia in flour, then egg wash, then browned panko.

Place breaded tilapia fillets on an oven-safe tray and into the 435º oven until cooked through, about 10–15 minutes.
