Bacon and Corn Chowder with Blackened Tilapia

Is there anything better than a warm and hearty chowder on a chilly day? It’s hard to beat the comforting flavors of Tilapia, bacon and corn ans when the wind is blowing and the rain is falling.
Ingredients:
4 REGAL SPRINGS Tilapia® Filets, cut into 1 inch cubes
1/3 cup Blackening seasoning
10 strips Bacon, minced
2 cups Corn, canned
1 cup Spanish onion, small dice
6 stalks Thyme, picked
1.5 qt Chicken stock
1 cup Half & half
2 cups Potatoes, peeled, small dice
Olive oil
Preparation:
In a bowl mix the blackening seasoning and tilapia together, keep cold.
In a large pot over medium high heat add 2 tablespoons of oil and the bacon, cook until crispy, add the onions, corn and thyme, cook for another 2-3 minutes until the onions are soft
Add the chicken stock and bring to a boil and cook for 10 minutes
Add the potatoes and reduce to a simmer, cook for 12 minutes, add the half & half, cook for another 3-4 minutes, shut off the heat
In a large sauté pan over medium high heat add ¼ cup olive oil
Cook the tilapia until done 2-3 minutes per side
Lay out for 10oz bowls, ladle 6oz’s into each bowl and place the cooked tilapia over top
