“One of the things I really love about tilapia is that the flavor is so mild that it can act as a blank canvas for other flavors and textures,” said Chef Viet Pham.
“As a chef, you want to showcase, not only the product, but also local ingredients like foraged herbs and vegetables. Tilapia works well with a variety of other herbs and vegetables.”
