Regal Springs Tilapia Recipes as Easy as A-B-Sea

Sweet & Sour Barbecued Tilapia 4 servings

Ingredients:

3 garlic cloves
2 tablespoons balsamic vinegar
Juice of ½ lime
Juice of ½ lemon
1/3 cup light brown sugar
2 tablespoons Dijon mustard
½ cup honey
1 teaspoon salt
½ teaspoon black pepper
4 tablespoons olive oil
1 pound Regal Springs Tilapia*
cut into 1-inch pieces
1 ½ cups panko bread crumbs
2 eggs
1 cup milk
1 teaspoon onion powder
HONEY MUSTARD DRESSING
1/3 cup olive oil
2 tablespoons balsamic vinegar
3 tablespoons honey
2 tablespoons Dijon mustard
½ teaspoon salt
½ teaspoon pepper

Whisk together all of the ingredients.
Put in a squeeze bottle and let kids dip
the tilapia into the sauce.

Directions:

  • In a food processor or blender puree the garlic, vinegar, lime and lemon juices, brown sugar, mustard and honey.
  • Slowly add in the olive oil and continue to blend into the mixture. 
  • Reserve the mixture for drizzling on nuggets or for dipping sauce. 
  • In separate bowl, combine panko crumbs and onion powder, salt and pepper. 
  • Beat eggs and milk mixture-place in a shallow dish. 
  • Dip tilapia pieces in egg mixture, then crumb mixture till coated completely. 
  • Place fillets on foil-lined baking sheet and drizzle with pureed garlic, vinegar and lime mixture. 
  • Bake at 400 degrees for 10 minutes until crispy and golden brown. 
  • Serve nuggets with colorful toothpicks, skewers or chopsticks to allow kids to dunk pieces into a dipping sauce like sweet and sour or barbecue sauce.
